2 servings1 can of mackerel1 tbsp olive oil½ onion, chopped½ cup fine grated carrot½ cup finely chopped bell pepper1 tbsp fresh cilantro1 eggcumin1 tsp sea saltpepper1 cup homemade tomato sauceWash the mackerel in a colander to remove excess salt and preservatives, drain.In a pan heat the olive oil, saute the onion, carrot and bell pepper 5 minutes. Set aside. In a bowl place the shredded mackerel. Add the onion mix and stir.. Season with cumin, salt and pepper. Assemble the balls and add to pan with the tomato sauce. Cook for about 10 minutes.
