ARUGULA AND APPLE SALAD

¼ cup cooked quinoa
2 cups arugula, baby spinach or green leaf mix
½ diced apple
¼ cup diced celery
¼ cup diced red onion
2 tsp sliced and roasted almonds
1 green onion chopped
2 tsp olive oil
1 tsp sea salt
pinch of pepper
vinegar or lemon juice

In a bowl put the quinoa, arugula, apple, celery, onion and green onion. Stir well. Add the oil, salt, pepper and vinegar. Mix well. Garnish with the almonds and serve.
