½ cucumber, peeled and finely sliced
1/3 cup chopped cilantro
¼ cup thinly sliced red onion
little olive oil
lemon juice or vinegar to taste
pinch of salt
ground pepper

In a mixing bowl place the cucumber, onion and cilantro, mix well and season with a pinch of salt, oil, lemon juice or vinegar and ground pepper to taste.
