250g almond flour
100g unsweetened grated coconut
2 beaten eggs
6 tbsp coconut oil
1 tsp baking powder
¼ tsp sea salt
6 tbsp stevia powder or to taste
2 tsp cinnamon
1 tsp ginger
½ tsp nutmeg
2 tsp vanilla essence
FROSTING (optional)
300 gr plain Greek yogurt, fat-free and unsweetened
¾ tbsp vanilla extract
2 tbsp stevia powder or to taste

In a bowl put a strainer and pour the yogurt. Cover with plastic film and refrigerate for about 3 hours to drain water.
Then pour the yogurt into a bowl, add the vanilla and stevia. Beat with electric mixer about 3 minutes or until thick.
Store the frosting in the refrigerator until ready to use.

Preheat the oven to 350º F. Line a cookie sheet with parchment paper.

In a bowl mix the flour, grated coconut, egg, coconut oil, baking powder, salt, stevia and vanilla essence. Stir until well combined.

Put the dough on the counter and flatten with your hands or a roller pin. Form the cookies using the molds with Christmas motifs that you want.

Place the cookies on the tray and bake for 7-10 minutes or until the cookies start to brown.
Remove and transfer to a wire rack to cool. Let cool for at least 30 minutes before frosting.

Apply the icing with a pastry bag. You can divide the frosting into wells and add drops of food coloring.
