4 thin steaks of lean beef (milanese type) (300 gr)
1 tsp salt
pepper to taste
garlic powder to taste
1 cup spinach
8 zucchini sticks
8 carrot sticks (similar to zucchini sticks)
2 tbsp olive oil divided
¼ chopped onion
1 ½ cup homemade tomato sauce
½ cup water or unsalted vegetable stock
1 tsp oregano
1 tsp cumin
4 toothpicks

On a kitchen board spread the steaks, add salt, pepper and garlic in each one. Then distribute the spinach and place 2 carrot sticks and 2 squash sticks in each one.
Now roll up and close with a toothpick.

Add 1 tablespoon of oil in a medium saucepan and brown the rolls on both sides. Set aside. Now add the remaining oil and sauté the onion along with the cumin for about 4 minutes or until it begins to brown. Add the rolls, oregano, tomato sauce and water as needed if it is too thick. Cook covered for 20 minutes flipping them occasionally.

Take out the 4 toothpicks before serving.
