SEITAN WITH ALMOND SAUCE

SEITAN CON SALSA DE ALMENDRAS

1 tbsp olive oil divided
250 gr seitan in slices
½ finely chopped onion
1 minced garlic clove
100 ml unsalted vegetable broth 
35 gr unsalted raw almonds
1 tsp sea salt
1 tbsp chopped cilantro
pepper to taste

In a pan add ½ tablespoon of olive oil and sauté the seitan on both sides. Take them out and place them between paper towel to absorb the oil.

Add the remaining oil and cook the onion and garlic. Transfer to a bowl along with the broth, almonds and salt. Blend with an immersion blender until puree.

Now return the seitan to the pan, pour in the almond sauce and season with pepper. Once hot, remove and serve with cilantro.
