CAULIFLOWER TORTILLAS

½ cooked cauliflower
2 eggs
1 tbsp chopped chives
½ tsp sea salt
pepper to taste

Preheat the oven to 400º F and line a baking sheet with parchment paper.

Put cauliflower on a clean kitchen towel and squeeze out as much of the water as possible.

In a bowl, beat the eggs with a fork and add the chives, salt and pepper. Add the cauliflower and stir until well combined.

Pour a tablespoon of the mixture on the baking sheet and flatten with your hand enough to make it flat and round. Repeat with the rest of the mixture.

Bake for about 12 minutes. Take out and fill with whatever you want: tomato, avocado, lettuce, chicken, etc.
