4 servings1 tbsp olive oil½ onion, sliced½ cup red bell pepper, in strips1 tomato, peeled and chopped½ cup carrot, sliced1/2 diced potato4 cups bone broth1 mackerel can1 tbsp chopped fresh parsleyoregano1 tsp sea saltpepper to tasteWash the mackerel carefully, preventing from falling apart, to remove excess salt and preservatives, drain.In a medium saucepan add the oil and sauté the onion, carrot and red pepper for about 5 minutes. Add the potato, tomato and bone broth. Season with oregano, salt and pepper. Bring to a boil over low heat for about 12 minutes. Add the mackerel and boil for 2 more minutes. Garnish with chopped parsley.
