2 servings1 can of mackerel in water½ chopped onion1 egg1 tbsp cilantro, chopped1 tbsp lemon juice1 tsp sea saltpepper to tastePreheat oven to 400º F.Wash the mackerel very well in a colander to remove excess salt and preservatives, drain.In a bowl mix the mackerel with the onion, add the cilantro and the lemon juice. Add salt and pepper. Mix.Add the egg and stir until everything is well combined. Form same-size balls, flatten them with the palm of your hand and shape into a croquette.Place them on a baking tray with parchment paper and bake for 15 minutes.
