2 servings1 can of mackerel in water½ finely chopped onion¼ cucumber, peeled and chopped½ cup carrot peeled and chopped1 celery stick chopped1 tomato chopped1 tbsp cilantro, finely chopped1 tbsp lemon juice1 tsp saltPepper1 tbsp olive oilRomaine lettuce leavesWash the mackerel very well in a colander to remove excess salt and preservatives, drain. In a bowl mix the onion with the shredded mackerel, add the cucumber, carrot, celery, tomato, cilantro and lemon juice. Season with salt, oil and pepper. Mix until everything is well combined. Assemble the tacos placing mackerel mixture on the lettuce and wrap it.
